Never Assume

Me: *Shakes the package... feels it... reads sender's name* "Ooh... could it be?"
Aryanna: "What is it mom?"
Me: "I think it's a Cambridge bag!"
Aryanna: "You're so lucky. I want one too."
Me: *Opens package... beams with happiness... jumps up and down* "I'm so happy! Yay!
Aryanna: "Ooh, it's the color I wanted! Can I please borrow it?"
Me: "Maybe..."
Aryanna: "Mom!"
Me: *LOL*
Aryanna: "Hey, the card fell. "

Aryanna reads the letter aloud.

Hi Ruby and Jayjay! First of all, you made my daughter ecstatic! You wrote "green satchel" but we got a navy blue one. Anyway, it's the color she really wanted. Thank you!

Aryanna: *Grabs the bag from me* "Thaaaaank you very much!"
Me: *Gasps* "Aryanna!"
Aryanna: "Uhm... maybe you can borrow it from me."

I'm obsessed with rearranging my makeup kits. I love how I get hypnotized by all the colored maquillage I own. I want to wear them all... not all at once... ooh, tri-colored eye shadows!

I'm patiently waiting for the 15" neon pink Cambridge satchel to arrive. Can someone please make it happen for me?

The search is on too for the Eppersons to find the right colored coffee table. If only we could agree on what color (go orange!)

Meatless Fridays: Century Tuna Caviar Pie

I've been busy this week that I only had this morning to whip up a recipe for "Meatless Friday". I took it as a challenge because just like many, sometimes, we don't have the time to prepare a decent meal. To make things worse, I had to duck out while preparing this recipe as Tom needed me. If you're following me on Twitter, you would know what I mean.

Good thing Aryanna was home the whole day to help me prepare the ingredients. When it comes to prepping the food, she's the best!

So, when rushed, a no-cook meal is the solution! Here's what I came up with:

Century Tuna Caviar Pie

Tuna is the new icing on the cake!

This recipe was inspired by the caviar pie. If you don't know what it is, Google it. LOL
Instead of using the expensive sturgeon roe, I substituted it with Century Tuna. The black olives gave the tuna pâté another layer of flavor and it also mimics the black color of the caviar. You must try this! So yummy!

Himalayan pink salt
Pepper

2 cans of Century Tuna in Brine, drained

From left: 3 pcs. of scallions or 1/2 red onion and spring onions; 2 pcs. lemon, 1 for the mix, 1 for garnishing

From top: 4 tbsp. of capers; 1 box of cream cheese; 20-30 pcs. of black olives, pitted

Easy peasy:

Step 1: Using a food processor, mix the tuna, capers, black olives, lemon juice, Himalayan pink salt, and pepper. You want to achieve a paste-like texture.
Tip: Don't forget the lemon juice!
Step 2: Using a mixer, whip up the cream cheese, chopped scallion, and spring onions. If you don't have a mixer, use a whisk or fork.
Step 3: Layer the tuna paste, cream cheese mix, then the tuna paste again on top. Ideally, a spring form pan would be the best way to make the tuna caviar cake.  I used a 4 -inch spring form pan. If you don't have one, any small round or square pan would do.
Step 4: Pack the layers well and pop it in the freezer for 30mins. 
Tip: Putting it in the freezer solidifies the cake, making it easy to transfer it on he plate. Otherwise, the fridge is fine.

Plating:

Once the cake has slightly hardened (not frozen), transfer it to a pâté plate or a bread plate. For garnish, use the other lemon, cut them into thin slices and make a sliver on one side. Twist it to create a fancy lemon design. Top it with a spring onion.
Layers of goodness!
This is how I serve it. Wheat or rice crackers go well with the Tuna Caviar. You can also make Tuna Caviar sandwiches using wheat bread.
Warning: This dish is addicting. I urge you to use less cream cheese and more of the tuna mix.;D

It takes only 45 mins., including freezer time to make this dish, but with distractions (yes, you, Tom!), it takes five hours! Haay! LOL

You can prepare the tuna mix in advance and keep it in the fridge. Whenever expected/unexpected guests pop by the house, just prepare the cream cheese and put it in the chiller. A few minutes later... et voilà... sosy, yummy, tuna caviarrrrrr pie!

10 Tips to Healthy Eating

I'll admit to you that the thought of dieting (read: starving myself) or taking diet pills sometimes enters my mind. It happens whenever I eat sweet spaghetti... with beef... and mushrooms... and lots of cheese... I had seconds... and thirds... I want Mochi mango ice cream... @.@

You get the picture.

I panic and my thought bubble reads: "F*ck."
I then have conversations with myself on what's the fastest way to shed the pounds and the answers are bad. You don't want to know. Tao lang po.
Then, I'm immediately reminded by the horrors of my previous "dieting" — mood swings! Haay!

As a busy working woman, wife, and mother, I have to be at my best mood to function. Mood swings are a no-no.

Once I've calmed down, "evil" thoughts slip away. Thank God for support groups. This morning, I received another email from a friend and it's exactly what I needed after eating Sabrett hotdog yesterday... while doing the grocery... and licking off every piece of morsel from my napkin... I love catsup... and brown spicy mustard... I want to eat Mochi mango ice cream... @.@:


10 tips to healthy eating

1. Eat a Variety of Foods

You need more than 40 different nutrients for good health and no single food can supply them all. Today's food supply makes it easy to eat a wide variety of foods whether or not you are buying fresh foods to cook, taking advantage of ready-prepared dishes and meals or buying "take-away" foods. Balance your choice over time! If you have a high-fat lunch, have a low-fat dinner. If you eat a large serving of meat at dinner one day, perhaps choose fish the next day.

2. Base your diet on plenty of foods rich in carbohydrates

Most people do not eat enough of foods such as bread, pasta, rice, other cereals and potatoes. More than half the calories in your diet should come from these foods. Try wholegrain bread, pasta and other wholegrain cereals, too, to increase your fiber intake.

3. Enjoy plenty of fruits and vegetables

Most of us do not eat enough of these foods either although they provide important protective nutrients. Try to eat at least five servings a day and if you do not enjoy them at first - try some new recipes or see what ready prepared dishes are available in the supermarket.

4. Maintain a healthy body weight and feel good

The weight that is right for you depends on many factors including your sex, height, age and heredity. Being overweight increases your risk of a wide range of diseases including heart disease and cancer. Excess body fat results when you eat more calories than you need. These extra calories can come from any caloric nutrient - protein, fat, carbohydrate or alcohol- but fat is the most concentrated source of calories. Physical activity is a good way of increasing the energy (calories) you expend each day and it can make you feel good. The message is simple: if you are gaining weight, you need to eat less and be more active.

5. Eat moderate portions - reduce, don't eliminate foods

If you keep portion sizes reasonable, it's easier to eat all the foods you enjoy without having to eliminate any. For example, some reasonable serving sizes are: 100g of meat; one medium piece of fruit, half a cup of raw pasta and 50ml of ice-cream. Ready-prepared meals can offer a handy means of portion control and they often have the calorie values on the pack to help those who are counting. If you are eating out, you could share a portion with a friend.

6. Eat regularly

Skipping meals, especially breakfast, can lead to out-of-control hunger, often resulting in helpless overeating. Snacking between meals can help curb hunger, but don't eat so much as to substitute for proper meals. Don't forget to count your snacks as part of your total calorie intake.

7. Drink plenty of fluids

Adults need to drink at least 1.5 litres of fluid a day! Or more if it's very hot or they are physically active. Plain tap water is obviously a good source of liquid but variety can be both pleasant and healthy. Alternative choices are juices, soft drinks, tea, coffee, milk etc.

8. Get on the move

As we have seen, too many calories and not enough activity can result in weight gain. Moderately physical activity helps burn off those extra calories. It is also good for the heart and circulatory system and for general health and well-being. So, make physical activity part of your daily routine. Use the stairs instead of the liftelevator (up and down!). Go for a walk in your lunch break. You don't have to be an athlete to get on the move!

9. Start now! - and make changes gradually

Gradual changes in your lifestyle are much easier to make than major changes all at once. For three days, write down the foods and drinks you consume at meals and as snacks - Do you have too few fruits andor portions of vegetables? To start with, try to eat just one extra piece of fruit and vegetables a day. Are your favourite foods high in fat and making you gain weight? Don't eliminate those foods and feel miserable, but try to choose low fat options or eat smaller portions. And start using the stairs at work!

10. Remember, it is all about balance

There are no 'good' or 'bad' foods, only good or bad diets. Don't feel guilty about the foods you love, rather eat them in moderation and choose other foods to provide the balance and variety that are vital to good health.

In a nutshell:
  • Eat a variety of foods
  • Base your diet on plenty of foods rich in carbohydrates
  • Enjoy plenty of fruits and vegetables
  • Maintain a healthy body weight and feel good
  • Eat moderate portions - reduce, don't eliminate foods
  • Eat regularly
  • Drink plenty of fluids
  • Get on the move
  • Start now! - and make changes gradually
  • Remember, it is all about balance

    Readers' Recipes

    I have to say that my amazing readers make me realize that sharing is truly caring. I'm glad that you guys have been cooking my recipes and enjoying it with your family. Aww...

    Who knew that by documenting the food I cook and sharing them with all of you would take this blog to new heights? More importantly, it has empowered some of you to take control of your health and kitchen! Yay!

    Here are more readers who cooked my recipes but tweaked them and made it their own! Great job!

    It has been a meatless day in our household! Woohoo! :) I never thought that was possible especially since my husband is allergic to seafood. *BOO!*

    Earlier this week I have been obsessing about healthy recipes and was able to make a somewhat healthy menu for the week. I saw a ton of recipes online but a lot of the ingredients are hard to find here. I needed to find recipes locally and I remembered coming across Jenni Epperson's blog where she shares some of her healthy recipes.

    This is what we had for lunch:

    Century Tuna Corn Sliders

    What it is:
    A mini whole wheat pandesal burger with tuna & mushroom patties on a bed of lettuce topped with garlic mayo and Enoki mushrooms. Jenni's recipe originally called for alfalfa sprouts but lettuce is another option. I also couldn't find Aioli mayonnaise nor garlic mayonnaise so I bought light mayonnaise instead and just added garlic powder. I was too excited to eat and forgot all about the tomatoes.

    The verdict?
    It was really, really good! Of course I couldn't take credit for our successful meal this afternoon, I do not know how to cook. Kudos to my yaya for a great job following the recipe! Special mention to me for being resourceful (and doing the grocery)! Hahaha.


    The husband loved it and said it was pretty filling. My eldest liked it too without complaints which is good because she often gets agitated when I let her try something new (and always says the new dish is spicy even if it is not). Our two-year-old however just had rice, as usual. She has mastered using the word "NO!" and there's only a handful of food that she eats. But overall, it was a huge success! Even our little chickie friends loved it! LOL

    Food Experiment #11
    Inspired by Jenni Epperson's Century Corned Tuna ala King, I made the recipe but I added canned button mushrooms and I used iodized rock salt instead of Himalayan pink salt. Since I do not have a muffin tray and an oven, I just rolled my wheat bread a little bit with a ketchup bottle, I kept the crust because I like it, stuck some toothpicks and put it in the oven toaster as shown in the photo below.

    It definitely is a must-try! I really love it with the toasted bread cups.
