Brunch: Whole wheat banana pancakes

I grew up eating Maya pancakes. I used to love their sweet pancakes and they were easy to cook. Now I find them too sweet. I prefer making pancakes from scratch.

While doing the grocery with Aryanna a few days ago, we spotted something exciting from Maya—Whole Wheat Pancake Mix! I got a box of it to try it out. 

Aryanna and I asked the pancake "master" (Tom) to try out our new "discovery". The Maya Whole Wheat Pancake Mix comes with two packs inside the box. Tom cooked one pack according to the directions on the box and it was good, but not as good as this:

Watchunid:

1 pack (1 box comes with 2 packs of pancake mix) Maya Whole Wheat Pancake Mix
1/2 a pack of the pancake mix requires 1 ripe banana
Clockwise: 2 tbsp. vegetable oil, 1/2 tsp. cinnamon powder, 1/2 tsp. vanilla essence, 1/2 to 3/4 cup water (the more water you use, the thinner the pancake mix. Tom used 1/2 cup water for this recipe), 1 egg
1/2 tsp. of lemon rind
Do you like our kyoot lemon zester/grater? Haha!

Easy peasy:

Step 1: Using a fork, mash up the banana
Step 2: Add the cinnamon, vanilla, and lemon rind to the banana
Step 3: Add 1 pack of Maya Whole Wheat Pancake Mix, egg, oil, and water to the mix
Step 4: Whisk it!
Tip: Don't over whisk the batter. A few clumps are OK to keep the pancake fluffy.
Step 5: Heat up the griddle or skillet and add a bit of oil. Keep the heat low to medium. Once the top starts to bubble, flip the pancake.
Light, fluffy whole wheat banana pancakes!
Add butter, maple or pancake syrup
Step 6: Serve with a smile!:D

The Eppersons verdict: Maya Whole Wheat Pancake Mix tastes less "wheaty" compared to other whole wheat pancakes we make from scratch. You don't notice the wheat flavor especially when mixed with bananas and lemon. The pancakes were fluffy and tasty. We just find that the color of the batter/pancake too brown as compared to the whole wheat pancakes we make from scratch so we're assuming that there's a bit of food coloring. Anyway, it doesn't matter because they were delicious!

We recommend it to replace your "white" pancakes, waffles, and corndog. Ooh... Corndog... I want!
